Christian views on alcohol are varied. Throughout the first 1,800 years of Church history, Christians generally consumed alcoholic beverages as a common part of everyday life and used "the fruit of the vine" in their central rite—the Eucharist or Lord's Supper. They held that both the Bible and Christian tradition taught that alcohol is a gift from God that makes life more joyous, but that over-indulgence leading to drunkenness is sinful. However, the alcoholic content of ancient alcoholic beverages was significantly lower than that of modern alcoholic beverages. The low alcoholic content was due to the limitations of fermentation and the nonexistence of distillation methods in the ancient world. Rabbinic teachers wrote acceptance criteria on consumability of ancient alcoholic beverages after significant dilution with water, and prohibited undiluted wine.

In the mid-19th century, some Protestant Christians moved from a position of allowing moderate use of alcohol (sometimes called "'moderationism") to either deciding that not imbibing was wisest in the present circumstances ("abstentionism") or prohibiting all ordinary consumption of alcohol because it was believed to be a sin ("prohibitionism"). Many Protestant churches, particularly Methodists, advocated abstentionism or prohibitionism and were early leaders in the temperance movement of the 19th and 20th centuries. Today, all three positions exist in Christianity, but the original position of alcohol consumption being permissible remains the most common and dominant view among Christians worldwide, in addition to the adherence by the largest bodies of Christian denominations, such as Anglicanism, Lutheranism, Roman Catholicism, and Eastern Orthodoxy. Washington wine is a wine produced from grape varieties grown in the U.S. state of Washington. Washington ranks second in the United States (behind California) in the production of wine. By 2017, the state had over 55,000 acres (220 km²) of vineyards, a harvest of 229,000 short tons (208,000 t) of grapes, and exports going to over 40 countries around the world from the 940+ wineries located in the state. While there are some viticultural activities in the cooler, wetter western half of the state, the majority (99.9%) of wine grape production takes place in the shrub-steppe eastern half. The rain shadow of the Cascade Range leaves the Columbia River Basin with around 8 inches (200 mm) of annual rain fall, making irrigation and water rights of paramount interest to the Washington wine industry. Viticulture in the state is also influenced by long sunlight hours (on average, two more hours a day than in California during the growing season) and consistent temperatures.

The early history of the Washington wine industry can be traced to the introduction of Cinsault grapes by Italian immigrants to the Walla Walla region. Grapes are not indigenous to the Columbia Valley viticultural area, but both Vinifera and Labruscavines are grown. The oldest planted Vinifera vines still in existence were planted by German immigrants in the Tampico vicinity, west of Union Gap, in 1871. Others were planted in the Kennewick area in 1895, and in the Walla Walla area by 1899. Planting of premium Vinifera grapes began in the Columbia Valley in the mid-1960s. By 1981 there were over 6,610 acres (2,675 ha) of Vinifera grapes including 2,700 acres (1,093 ha) of cultivated vineyards. In the 1950s and 1960s, the precursors of the state's biggest wineries (Chateau Ste. Michelle and Columbia Winery) were founded. Throughout the rest of the 20th century, the wine world discovered a new aspect of Washington wines with each passing decade – starting with Rieslings and Chardonnays in the 1970s, the Merlot craze of the 1980s and the emergence of Cabernet Sauvignon and Syrah in the 1990s. Washington has twenty federally defined American Viticultural Area (AVA)s with all but one located in Eastern Washington. The largest is the Columbia Valley AVA, which extends into a small portion of northern Oregon and encompasses most of the states's AVAs. They are Lewis-Clark Valley AVA, the Ancient Lakes AVA, Walla Walla Valley AVA, which encompasses Oregon's The Rocks District of Milton-Freewater AVA, Horse Heaven Hills AVA, the Wahluke Slope AVA, Lake Chelan AVA, Naches Heights AVA, and the Yakima Valley AVA, which in turn also encompasses the Rattlesnake Hills AVA, Snipes Mountain AVA, the Red Mountain AVA, Goose Gap AVA and the Candy Mountain AVA. The Columbia Gorge AVA is west of the Columbia Valley AVA. As of 2023, Washington's only AVA located west of the Cascades is the Puget Sound AVA and a petition has been submitted to Alcohol and Tobacco Tax and Trade Bureau (TTB) proposing a new American Viticultural Area named "Mount St. Helens" covering parts of Clark County, Cowlitz County, Skamania County and Lewis County. Pinot noir (French: [pino nwaʁ]) or Pinot nero is a red-wine grape variety of the species Vitis vinifera. The name may also refer to wines created predominantly from pinot noir grapes. The name is derived from the French words for pine and black. The word pine alludes to the grape variety having tightly clustered, pinecone–shaped bunches of fruit.

Pinot noir is grown around the world, mostly in cooler climates, and the variety is chiefly associated with the Burgundy region of France. Pinot noir is now used to make red wines around the world, as well as champagne, sparkling white wines such as the Italian Franciacorta, and English sparkling wines. Regions that have gained a reputation for red pinot noir wines include the Willamette Valley of Oregon; the Carneros, Central Coast, Sonoma Coast, and Russian River AVAs of California; the Elgin and Walker Bay wine regions of South Africa; the Mornington Peninsula, Adelaide Hills, Great Southern, Tasmania, and Yarra Valley in Australia; and the Central Otago, Martinborough, and Marlborough wine regions of New Zealand. Grenache (/ɡrəˈnæʃ/) or Garnacha (IPA: [ɡaɾˈnatʃa]) is one of the most widely planted red wine grape varieties in the world. It ripens late, so it needs hot, dry conditions such as those found in Spain, where the grape is believed to have originated. It is also grown in the Italian island of Sardinia, the south of France, Australia, and California's Monterey AVA, Paso Robles, Santa Barbara County and San Joaquin Valley.

It is generally spicy, berry-flavored and soft on the palate and produces wine with a relatively high alcohol content, but it needs careful control of yields for best results. Characteristic flavor profiles on Grenache include red fruit flavors (raspberry and strawberry) with a subtle, white pepper spice note. Grenache wines are highly prone to oxidation, with even young examples having the potential to show browning (or "bricking") coloration that can be noticed around the rim when evaluating the wine at an angle in the glass. As Grenache ages the wines tend to take on more leather and tar flavors. Wines made from Grenache tend to lack acid, tannin and color, and it is often blended with other varieties such as Syrah, Carignan, Tempranillo, and Cinsaut. (Full article...)

The Australian wine industry is one of the world's largest exporters of wine, with approximately 800 million out of the 1.2 to 1.3 billion litres produced annually exported to overseas markets. The wine industry is a significant contributor to the Australian economy through production, employment, export, and tourism.

There is a $3.5 billion domestic market for Australian wines, with Australians consuming approximately 500 million litres annually. Norfolk Islanders are the second biggest per capita wine consumers in the world with 54 litres. Only 16.6% of wine sold domestically is imported. (Full article...)

White wine is a wine that is fermented without skin contact. The colour can be straw-yellow, yellow-green, or yellow-gold. It is produced by the alcoholic fermentation of the non-coloured pulp of grapes, which may have a skin of any colour. White wine has existed for at least 4,000 years.

The wide variety of white wines comes from the large number of varieties, methods of winemaking, and ratios of residual sugar. White wine is mainly from "white" grapes, which are green or yellow in colour, such as the Chardonnay, Sauvignon blanc and Riesling. Some white wine is also made from grapes with coloured skin, provided that the obtained wort is not stained. Pinot noir, for example, is commonly used to produce champagne. (Full article...)

Monica Larner is a wine critic and writer based in Rome. She is the Italian Reviewer for The Wine Advocate and eRobertParker.com, the bimonthly wine publication and website founded by wine critic, Robert Parker. She was selected in 2013 by Parker to replace the departing Antonio Galloni.

In 2003, Larner was selected to be the very first dedicated Italian wine editor for Wine Enthusiast. She is also a two-time winner of the Best Young Journalist of the Year (2008, 2010), one of the top honors given out yearly at the VinItaly exposition. In 2012, Larner won Best International Journalist also presented by the Comitato Grandi Cru d'Italia panel at VinItaly. Orange wine, also known as skin-contact white wine, skin-fermented white wine, or amber wine, is a type of wine made from white wine grapes where the grape skins are not removed—as is typical in red wine production—, and stay in contact with the juice for days or even months. This contrasts with conventional white wine production, which involves crushing the grapes and quickly moving the juice off the skins into the fermentation vessel. The skins contain color pigment, phenols and tannins that would normally be considered undesirable for white wines, while for red wines skin contact and maceration is a vital part of the winemaking process that gives red wine its color, flavor, and texture.

The International Organisation of Vine and Wine describes orange/amber wine as "White wine with maceration" and prescribes the minimum duration of the maceration phase to be 1 month. (Full article...)

Cabernet Sauvignon (French: [kabɛʁnɛ soviɲɔ̃]) is one of the world's most widely recognized red wine grape varieties. It is grown in nearly every major wine producing country among a diverse spectrum of climates from Australia and British Columbia, Canada to Lebanon's Beqaa Valley. Cabernet Sauvignon became internationally recognized through its prominence in Bordeaux wines, where it is often blended with Merlot and Cabernet Franc. From France and Spain, the grape spread across Europe and to the New World where it found new homes in places like California's Napa Valley, New Zealand's Hawke's Bay, South Africa's Stellenbosch region, Australia's Margaret River, McLaren Vale and Coonawarra regions, and Chile's Maipo Valley and Colchagua. For most of the 20th century, it was the world's most widely planted premium red wine grape until it was surpassed by Merlot in the 1990s.
However, by 2015, Cabernet Sauvignon had once again become the most widely planted wine grape, with a total of 341,000 hectares (3,410 km²) under vine worldwide.

Despite its prominence in the industry, the grape is a relatively new variety, the product of a chance crossing between Cabernet Franc and Sauvignon blanc during the 17th century in southwestern France. Its popularity is often attributed to its ease of cultivation—the grapes have thick skins and the vines are hardy and naturally low yielding, budding late to avoid frost and resistant to viticultural hazards such as rot and insects—and to its consistent presentation of structure and flavours which express the typical character ("typicity") of the variety. Familiarity has helped sell Cabernet Sauvignon wines to consumers, even from unfamiliar wine regions. Its widespread popularity has also contributed to criticism of the grape as a "colonizer" that takes over wine regions at the expense of indigenous grape varieties. (Full article...)

Ordinaire is a wine bar, wine shop, and bistro-style restaurant in the Grand Lake District of Oakland, California. Ordinaire specializes in selling natural wine produced from organic grapes with minimal chemical and technological intervention. Owner Bradford Taylor opened Ordinaire in September 2013. Taylor is also an organizer of an annual natural wine festival in Oakland called Brumaire, which has held events at Ordinaire.

Ordinaire periodically partners with chefs to open as a pop-up restaurant called Bistro Ordinaire. Food and wine critics have praised Ordinaire for its selection of wines and hip yet unpretentious atmosphere. Amid a wave of interest in natural wine in the United States, Ordinaire has helped to establish Oakland as a natural wine hub. Sherry (Spanish: jerez [xeˈɾeθ]) is a fortified wine made from white grapes that are grown near the city of Jerez de la Frontera in Andalusia, Spain. Sherry is a drink produced in a variety of styles made primarily from the Palomino grape, ranging from light versions similar to white table wines, such as Manzanilla and fino, to darker and heavier versions that have been allowed to oxidise as they age in barrel, such as Amontillado and oloroso. Sweet dessert wines are also made from Pedro Ximénez or Moscatel grapes, and are sometimes blended with Palomino-based sherries.

Under the official name of Jerez-Xérès-Sherry, it is one of Spain's wine regions, a Denominación de Origen Protegida (DOP). The word sherry is an anglicisation of Xérès (Jerez). Sherry was previously known as sack, from the Spanish saca, meaning "extraction" from the solera. In Europe, "sherry" has protected designation of origin status, and under Spanish law, all wine labelled as "sherry" must legally come from the Sherry Triangle, an area in the province of Cádiz between Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María. In 1933 the Jerez denominación de origen was the first Spanish denominación to be officially recognised in this way, officially named D.O. Jerez-Xeres-Sherry and sharing the same governing council as D.O. Manzanilla Sanlúcar de Barrameda. (Full article...)

German wine is primarily produced in the west of Germany, along the river Rhine and its tributaries, with the oldest plantations going back to the Roman era. Approximately 60 percent of German wine is produced in the state of Rhineland-Palatinate, where 6 of the 13 regions (Anbaugebiete) for quality wine are situated. Germany has about 103,000 hectares (252,000 acres or 1,030 square kilometers) of vineyard, which is around one tenth of the vineyard surface in Spain, France or Italy. The total wine production is usually around 10 million hectoliters annually, corresponding to 1.3 billion bottles, which places Germany as the eighth-largest wine-producing country in the world. White wine accounts for almost two thirds of the total production.

As a wine country, Germany has a mixed reputation internationally, with some consumers on the export markets associating Germany with the world's most elegant and aromatically pure white wines while other see the country mainly as the source of cheap, mass-market semi-sweet wines such as Liebfraumilch. Among enthusiasts, Germany's reputation is primarily based on wines made from the Riesling grape variety, which at its best is used for aromatic, fruity and elegant white wines that range from very crisp and dry to well-balanced, sweet and of enormous aromatic concentration. While primarily a white wine country, red wine production surged in the 1990s and early 2000s, primarily fuelled by domestic demand, and the proportion of the German vineyards devoted to the cultivation of dark-skinned grape varieties has now stabilized at slightly more than a third of the total surface. A rosé (French: [ʁoze]) is a type of wine that incorporates some of the color from the grape skins, but not enough to qualify it as a red wine. It may be the oldest known type of wine, as it is the most straightforward to make with the skin contact method. The pink color can range from a pale "onionskin" orange to a vivid near-purple, depending on the grape varieties used and winemaking techniques. Usually, the wine is labelled rosé in French, Portuguese, and English-speaking countries, rosado in Spanish, or rosato in Italian.

There are three major ways to produce rosé wine: skin contact, saignée, and blending. Rosé wines can be made still, semi-sparkling or sparkling and with a wide range of sweetness levels from highly dry Provençal rosé to sweet White Zinfandels and blushes. The role of yeast in winemaking is the most important element that distinguishes wine from fruit juice. In the absence of oxygen, yeast converts the sugars of the fruit into alcohol and carbon dioxide through the process of fermentation. The more sugars in the grapes, the higher the potential alcohol level of the wine if the yeast are allowed to carry out fermentation to dryness. Sometimes winemakers will stop fermentation early in order to leave some residual sugars and sweetness in the wine such as with dessert wines. This can be achieved by dropping fermentation temperatures to the point where the yeast are inactive, sterile filtering the wine to remove the yeast or fortification with brandy or neutral spirits to kill off the yeast cells. If fermentation is unintentionally stopped, such as when the yeasts become exhausted of available nutrients and the wine has not yet reached dryness, this is considered a stuck fermentation.

The most common yeast associated with winemaking is Saccharomyces cerevisiae which has been favored due to its predictable and vigorous fermentation capabilities, tolerance of relatively high levels of alcohol and sulfur dioxide as well as its ability to thrive in normal wine pH between 2.8 and 4. Despite its widespread use which often includes deliberate inoculation from cultured stock, S. cerevisiae is rarely the only yeast species involved in a fermentation. Grapes brought in from harvest are usually teeming with a variety of "wild yeast" from the Kloeckera and Candida genera. These yeasts often begin the fermentation process almost as soon as the grapes are picked when the weight of the clusters in the harvest bins begin to crush the grapes, releasing the sugar-rich must. While additions of sulfur dioxide (often added at the crusher) may limit some of the wild yeast activities, these yeasts will usually die out once the alcohol level reaches about 15% due to the toxicity of alcohol on the yeast cells physiology while the more alcohol tolerant Saccharomyces species take over. In addition to S. cerevisiae, Saccharomyces bayanus is a species of yeast that can tolerate alcohol levels of 17–20% and is often used in fortified wine production such as ports and varieties such as Zinfandel and Syrah harvested at high Brix sugar levels. Another common yeast involved in wine production is Brettanomyces whose presence in a wine may be viewed by different winemakers as either a wine fault or in limited quantities as an added note of complexity. French wine is produced all throughout France, in quantities between 50 and 60 million hectolitres per year, or 7–8 billion bottles. France is one of the largest wine producers in the world, along with Italian, Spanish, and American wine-producing regions. French wine traces its history to the 6th century BCE, with many of France's regions dating their wine-making history to Roman times. The wines produced range from expensive wines sold internationally to modest wines usually only seen within France such as the Margnat wines of the post-war period.

Two concepts central to the better French wines are the notion of terroir, which links the style of the wines to the locations where the grapes are grown and the wine is made, and the Appellation d'origine contrôlée (AOC) system, replaced by the Appellation d'Origine Protégée (AOP) system in 2012. Appellation rules closely define which grape varieties and winemaking practices are approved for classification in each of France's several hundred geographically defined appellations, which can cover regions, villages or vineyards.
